At Darden, our sustainability efforts extend beyond our restaurants to each step of our supply chain. For a closer look at Darden’s and our suppliers’ commitments to sustainability, Darden Digest will regularly feature one of our suppliers and their efforts toward more sustainable operations. This month we focus on Rio Farms & Gills Onions of California, which has significantly eliminated waste, while generating energy, through composting. Recently, we had the opportunity to speak with Rio Farms’ and Gills Onions’ Director of Sustainability Nikki Rodoni.
