Straus Family Creamery Welcomes Mazzetta Dairy as a New Milk Supplier
We are excited to announce that recently another local dairy farm has joined our group of milk suppliers. The Mazzetta Dairy is owned by Ken and Nancy Mazzetta and has a herd of approximately 190 cows, half of them Holsteins and half of them Holstein-Jersey cross breeds. Their farm is located in West Petaluma on 485 acres of pristine Sonoma County pasture land.

Ken Mazzetta’s family has been in the dairy business since 1959, when his parents first started farming in Marin County with 250 milking cows. When Ken Mazzetta was only nineteen years old, his family bought his current dairy farm in West Petaluma, which he has been managing ever since.
 
When we reached out in search of a new milk supplier earlier in the year, Ken and Nancy Mazzetta were not only interested in joining us, but also willing to sell off their conventional herd and buy a new, organic one. Now their farm is 100% certified organic.
 
As with all of the milk suppliers for Straus Family Creamery, Non-GMO Project Verification is another necessary certification and the Mazzetta Dairy fulfills all requirements to be covered under the verification seal. This verification guarantees that that every lot of cow feed is tested and certified GMO free.
 
We extend a warm welcome to the Mazzetta family! We will gladly use the additional milk and butterfat to make our authentic, Organic, Cream-Top Milk, Organic Yogurt, Organic Butter, Organic Ice Cream and Organic Sour Cream.

New – Organic Greek Yogurt. Give it a spin!
To all Greek Yogurt lovers out there – it is finally here: Our new Organic Greek Yogurt! It took some time refining the recipe until flavor and texture were in perfect balance. Give it a try - we hope you will enjoy it as much as we do.

All Straus Family Creamery products start with flavorful, Organic Milk from the Straus and the four other local, family-run dairies we supply milk from. This is also true for the new Organic Greek Yogurt, which has the thick and creamy texture of traditional Greek Yogurt and the delicious, authentic Straus Family Creamery taste.
 
The specific dairy flavor originates from the cows’ diet, consisting mainly of sweet pasture grasses from the hillsides of Marin and Sonoma Counties along the Northern California Coast, where the cows graze. The fertile soil, mild, coastal climate and fresh marine air generate grassland that is highly nutritious and unique for this area, which is ideal for dairy cows.

No thickeners or stabilizers are ever used in any Straus Family Creamery yogurt products. Organic Greek Yogurt is made with only two ingredients: Organic milk and live, active cultures. The yogurt is first slowly cultured and set in a stainless steel vat (not in the cup) and then carefully strained, which gives it its wonderful thick and silky texture. 

As all of our yogurt products, Organic Greek Yogurt is also Non-GMO Verified, certified kosher and gluten free.

Yes on Prop 37! CA Right to Know Initiative on Ballot in November

The little campaign that could: The CA Right to Know Ballot initiative has a new name: Prop 37. What started out with one woman, Pamm Larry from Chico, and turned into a vast grassroots movement, is now officially on the ballot for the November 6thelections. 

The campaign team, with a full-time staff of six, is rallying support all over the state. Recent, high-profile endorsements include the Democratic Party, Sierra Club and United Farm Workers of America.
 
We encourage you to do the same and endorse the campaign. It takes less than a minute online to submit yours, your organization’s or your company’s endorsement
 
Just this week the campaign has launched the “One Million More” campaign, with the goal of engaging consumers in one million more actions, raising one million more dollars, and getting one million endorsements.

Summer Recipe: Black Sesame Panna Cotta with Ginger Granite
By Francis Ang, Executive Pastry Chef, Fifth Floor Restaurant

For our new Organic Greek Yogurt, Chef Francis Ang kindly shared this wonderful recipe with us. In this refreshing summer dessert, the rich flavors of berries and ginger combine in perfect harmony with the tanginess of our Greek Yogurt. 

Ingredients:
1 cup Straus Organic Whipping Cream 1 cup Straus Organic Greek Yogurt ½ cup sugar ¼ tsp salt 1 tsp gelatin powder 2 Tbsp ice-cold water 2 Tbsp black sesame powder (*see note below) 1 cup strawberries ¾ cup raspberries For the Panna Cotta:
  • Bloom the gelatin by adding it in the water. Let sit for 5 minutes.
  • Combine the cream, sugar, salt and black sesame in a sauce pan. Heat until warm. Make sure it does not simmer or boil.
  • Add the bloomed gelatin to the cream mixture and whisk to melt. Then add the Organic Greek Yogurt and whisk again.
  • Pour into 4 ramekins or preferred bowl. Cover and chill in the fridge until set. It will take several hours. It can sit for up to three days.
For the Ginger granite Yield: 1 cup 1-2 inch knob of ginger size of a thumb, peeled 1 cup water 3 Tbsp granulated sugar 1 Tbsp fresh lemon juice
  1. Combine all ingredients in a blender and pour through a fine mesh strainer 2. Pour into a wide container and put in the freezer 3. Stir the mixture every 15 to 20 minutes until it looks like shaved ice

To Assemble:

Dice strawberries. Sprinkle strawberries and raspberries on top of Panna Cotta. Scatter one spoonful of Ginger Granite on top and enjoy! * Black sesame powder can be found in Asian markets. Alternatively you can make your own by toasting black sesame seeds in a 300-degree oven for 5 minutes, cooling, then grinding to a powder
